Maple Chai Muffins

We love this recipe for Maple Chai Muffins! Have it for breakfast with your coffee or tea in the morning or take it to work with you for an afternoon snack.

 

Ingredients: 

  • 1 package Medifast Maple Brown Sugar Oatmeal
  • 1 package Medifast Chai
  • 1/2 tsp pumpkin pie spice
  • 1/3 cup Sugar Free DaVinci Pancake Syrup
  • 2 egg whites
  • 1/4 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder

Directions:

  • Preheat the oven to 350 degrees.
  • Spray a muffin pan with butter flavored Pam before pouring the batter into the pan. Sprinkle cinnamon on top (optional) and bake for 12-15 minutes, or until a toothpick comes out clean. This recipe will make 4 muffins.

Medifast Tip: 2 muffins makes a meal – and don’t forget the egg whites as part of your daily protein.

This recipe for Surf and Turf Kabobs with Medifast Fajita Seasoning is perfect for any weeknight dinner, summer BBQ or soiree!

Ingredients

  • 8-10 fully cooked deveined shrimp
  • 5 oz. New York sirloin steak (can swap with chicken)
  • 1/2 cup cherry tomatoes
  • 1/2 cup whole mushrooms
  • 1/2 cup cubed peppers
  • 1 Packet Medifast fajita seasoning

Directions 

Sprinkle steak or chicken, shrimp and vegetables with one packet of Medifast fajita seasoning. Assemble meat and veggies on skewers. Grill kabobs until meat is fully cooked.

Cream of Tomato Flatbread

Ingredients

  • 1 Pkg Medifast Cream of Tomato Soup mix
  • ¼ tsp. baking powder
  • Garlic/herb powder to taste
  • Several leaves fresh basil (chopped)
  • Fresh rosemary leaves (chopped)
  • 2 Tbsp. water

Directions

Preheat oven to 425 degrees and prepare baking sheet with parchment paper or cooking spray. Mix all ingredients. Use a wet spatula and scoop down dough into a circular or square shape. Bake for 3-5 minutes until firm enough to flip. Bake an additional 3-5 minutes until done or until edges are golden brown.

Chocolate Chip Crepes with Raspberry Filling

Ingredients

  • 1 packet Medifast chocolate chip pancakes
  • ¼ cup Water
  • 1-2 Tbsp. Sugar Free Raspberry or Strawberry jam (whichever you prefer)

Directions

Mix pancake mixture and water in shaker jar until lumps are gone. Using a small sauté pan evenly coat mixture over surface. Cook crepe about 2 minutes on medium heat, until bottom is light brown. Loosen with a spatula, turn and cook the other side. Fill with 1-2 Tbsp. of sugar free jam and roll. Serve warm.
